On Friday, April 16, 2021, the Center welcomed Joshua Specht, author of Red Meat Republic: A Hoof-to-Table History of How Beef Changed America.听Specht, an environmental and business historian of the United States, explores how American rich and poor came to expect affordable high-quality fresh beef.
